Borrowed from English lobscouse (“stew of meat and potatoes”), a dialectal and nautical term of uncertain origin. The dish and its name spread through the seafaring communities of northern Europe.
Compare Danish labskovs, Swedish lapskojs, German Labskaus and Dutch lapskous (“related meat-and-potato dishes”). The Norwegian form was later borrowed into English as lapskaus.
