Possibly somehow influenced by an Occitan and/or Norman stratum. Ultimately from Latin cancer, cancrum (“crab”). Undergone a metathetical sonorization from ⟨kVnkrV⟩ to ⟨grVnkV⟩, like Italian granchio; then followed by the palatalization of the ultima. Compare also the other Romance (and Iberic) cognates Catalan cranc/carranc, Occitan cranc, Galician cáncaro, (cángaro, cancro, cangrio), French chancre, Spanish cangrejo, Portuguese carango, Venetan cancaro.
