Vulgar Latin *barilus or *barillus, perhaps via Old French baril, as a direct inheritance would yield *barilo. Stated by Vocabolario etimologico della lingua italiana to be of Celtic origin, however a more likely origin is Proto-West Germanic *baril, from Proto-Germanic *barilaz, cf. the etymology for Old French baril.
