Inherited from Old Italian sarpare, of uncertain further origin. Babiniotis considers the term to be from an earlier Vulgar Latin *ex-harpāre, which would be borrowed from Ancient Greek ἐξαρπάζω (exarpázō, “to snatch away from, tear out”), with sense development "to tear off" > "to drag quickly" > "to weigh anchor". Other theories derive the Old Italian from serpe (“snake”), itself from Latin serpēns, though the sense development under this theory is unclear. (Can this(+) etymology be sourced?)
