pakkas- (“frost, subzero temperature”) + -taa; compare ukkostaa. The sense “to freeze (food)” was the winner of a competition held by Paulig in 1942 to find a replacement for the technical term syväjäädyttää (similarly the noun pakaste for earlier syväjäädytystuote).
