From Middle Dutch herfst, from Old Dutch *hervist, from Proto-West Germanic *harbist, from Proto-Germanic *harbistaz, from Proto-Indo-European *kerp-. The original meaning was “harvest time”, as is seen in herfstmaand.
Cognate with German Herbst, Low German Harvst, West Frisian hjerst, English harvest; further with Latin carpere (“to pick, to pluck”), Greek καρπός (karpós, “fruit, harvest”).
