From Low German Struwe, from Middle Low German strûve (“flat pastry”), from the adjective Proto-Germanic *strūbaz (“stiff, shaggy”). Doublet of southern Straube (“kind of fritter, doughnut”). Further cognate with Dutch struif (“pancake, omelette”).
